Appetizer at the Old Stanovchich Kitchen restaurant, Herceg Novi, Montenegro

Prsciuta

Prsciuta is dry pork ham produced on our mountain farm. Prsciuta is known throughout Montenegro. The dish is also very similar to Italian prosciutto. The specialty of Montenegrin prsciuta is that during the drying phase, beech logs are burned nearby. The smoke, mixing with the mountain and sea air, gives the meat a special taste. The meat is salted with sea salt and aged with mountain herbs.

Extras

Home-made cheese with dill is served with prsciuta, and also olives, greens, tomatoes and pickles, if desired. Since our restaurant is about homemade dishes, we decide together with you what will be added to the dish, or you simply trust us to take care of you, and relax.

Homemade cheeses

Cheeses are made from ingredients obtained in our farm and according to exceptional traditional recipes. We draw your attention to the fact that some cheeses are made with the addition of dill, paprika, wheat grains and other spices. Cheeses are a real treasure of rustic old cuisine. The body absorbs them by 90%, with cheese a person gets most of the substances necessary for health.

Priganice

These are balls of dough fried in oil, served with homemade cheese, cream, smoked meat. Our priganice are cooked in stone ovens and served with cheese made of local milk from cow, goat and sheep that grazed on clean mountain pastures. Tomatoes and greens are served with the dish.
